January is a rubbish month; everyone knows that, no-one has any money and the weeks seem to go on forever.  Everyone needs a little bit of relief from austerity.  These little Welsh cakes are perfect, frugal in that they only have 5 ingredients, all of which can be found in the cupboard of the most cash-poor household (trust me), but they’re delicious, sunny little circles that will help get you through the next 6 days until February starts…

Welsh Cakes (Delia)

8 oz self raising flour
4 oz butter
3 oz raisins
3 oz caster sugar
1 egg
1/2 teaspoon mixed spice

Rub all the dry ingredients together, then add the butter until you’ve got a breadcrumb-y mixture.  Mix in the raisins (or any other sort of dried grape will do), then beat the egg, adding it in to the mix.  Form a dough, then roll out to a medium thickness.  Cut out circles.  Grease a griddle, or if you don’t have one, a heavy bottomed frying pan, and fry the cakes in small batches until golden brown on both sides.  Sprinkle with a little extra caster sugar.  Consume immediately, even if it means burning your tongue.
